Because the miracle involved oil, the festive table is full of foods fried in oil. The best known are latkes (potato pancakes) and sufganiyot (filled doughnuts), especially beloved in Israel.
Mountain and Sephardic Jews have their own oil-fried sweets and fritters. Dairy dishes are also served — in memory of the heroism of Judith — and, of course, sweets for the children.
